It has been four months since we launched our cookbook for impact and to celebrate we have teamed up with one of our starring cafes, Plain Sailing, to gift you their infamous Sautéed Cauliflower recipe.
It is yours for the taking…
The Recipe

Ingredients
1 cup cauliflower, cut into bite-sized florets
1 tsp garlic, minced
1 tsp cumin
2/3 cup chickpeas
1/2 cup parsley, chopped
1/2 cup mint, chopped
2 kale leaves, torn roughly
2 tbsp almonds, chopped
1tbsp dried cranberries
To Serve
1 tbsp feta, crumbled
1 tbsp pomegranate seeds
8 eggs, poached or other choice
Dukkah, optional
Method
Serves 4
Heat oil in a frypan on medium heat. Once oil is hot, add cauliflower and cook for 3-4 minutes until golden. Add garlic, cumin, chickpeas and cook for a further 2 minutes. Add herbs, kale, almond and cranberries, and cook until kale is softened. Then add lemon juice.
To Serve
Garnish with feta and pomegranate seeds and serve with eggs of your choice. If you have Dukkah, sprinkle over the top for that extra Middle Eastern kick!
